Open a hole in the flour in a wide cup, crack the egg, add a pinch of salt and knead the dough by adding a little bit of water gradually. The dough shouldn’t be too firm or too soft. Pull of little lumps of dough and roll it out until it is thicker than instant pastry. On the other side, add chili pepper, black pepper, salt and grated onion into the ground meat and knead it a little bit. Fill the dough which you cut into square shapes with the little pieces of ground meat mixture. Close the square dough by bringing all 4 corners together and give it a shape. When mantı is ready, put them into the boiling water and cook them around 15-20 minutes. In the meantime melt butter in a small frying pan and brown the tomato paste with it. Add it into boiling water of the cooking mantı. After cooking for about 5 minutes, take it off the stove. Serve the mantı in a plate and pour yoghurt with garlic on it. Spread mint and lots of sumac. You may use chili pepper if you wish. Bon appetite.
